Brown Rice Salad

Ingredients:
2 cups cooked brown rice
3 spring onions chopped
1 carrot
1 cucumber
1 red pepper chopped
¾ cup cranberries
1 cup roasted (unsalted) cashews
Chopped parsley and coriander

Dressing:
4 tbs soy sauce
2 tbs lemon juice
1 clove garlic crushed
black pepper

Directions:
Cook rice, rinse with cold water, drain and allow to cool.

Add remaining ingredients and stir through.

Make dressing and stir through just before serving.
