Energy Cookie Recipe

Ingredients
1 cup muesli
1 cup plain flour
½ cup coconut
½ cup brown sugar
¼ cup butter
1 tsp bicarb soda
½ cup of warm water

Optional extras:
Dried fruit, seeds and unsalted nuts

Directions
Mix flour, sugar, muesli and coconut in a bowl.
Melt the butter in a saucepan then add the warm water and bicarb. Take it off the heat and wait until it finishes frothing, then add to the dry mixture.
Roll mixture into small balls and place on a baking tray lined with baking paper
Press down, making sure all cookies have an even thickness.
Cook for 10-15 minutes in a 200 degree oven.  Cookies will still be soft when they come out.
Allow to cool.
Eat them before the kids do!
