Quinoa and Cauliflower Salad

A simple yet delicious salad to be enjoyed for lunch or dinner

Best variations: Add more vegetables, just about everything goes with this salad

Ingredients

INGREDIENTS

  • ̄1/2 pumpkin
  • 1 cauliflower
  • 2 cups cooked quinoa
  • 1/2 cup cranberries
  • 1 cup coriander
  • 1 tsp turmeric
  • 2 cups spinach leaves (optional)
  • 1/2 cup almonds slivered (optional)
  • 1/s cup sunflower seeds (optional)DRESSING
  • 1/2 cup lemon juice
  • 1/4 table spoon olive oil
  • Salt and pepper

Method

  1. Chop pumpkin and cauliflower into small pieces, place in a roasting dish then spray with olive oil, turmeric salt and pepper. Roast in oven until soft.
  2. Cook quinoa as per instructions on the packet and fluff up.
  3. Once cooked add in roasted pumpkin and cauliflower, and all other ingredients
  4. Mix dressing ingredients together, mix wet and dry ingredients everything together
