Quinoa and Cauliflower Salad

A simple yet delicious salad to be enjoyed for lunch or dinner

Best variations: Add more vegetables, just about everything goes with this salad
Ingredients
INGREDIENTS
- ̄1/2 pumpkin
- 1 cauliflower
- 2 cups cooked quinoa
- 1/2 cup cranberries
- 1 cup coriander
- 1 tsp turmeric
- 2 cups spinach leaves (optional)
- 1/2 cup almonds slivered (optional)
- 1/s cup sunflower seeds (optional)DRESSING
- 1/2 cup lemon juice
- 1/4 table spoon olive oil
- Salt and pepper
Method
- Chop pumpkin and cauliflower into small pieces, place in a roasting dish then spray with olive oil, turmeric salt and pepper. Roast in oven until soft.
- Cook quinoa as per instructions on the packet and fluff up.
- Once cooked add in roasted pumpkin and cauliflower, and all other ingredients
- Mix dressing ingredients together, mix wet and dry ingredients everything together
